While devotion to small beer sometimes borders on niche market snobbery, the tiny, local handmade spirits industry – as demonstrated by the skilled and capable distillers of Revolution Spirits – is a branch of consumable artisanship only the coolest are allowed to know about.

Balcones Distilling Co. debuted its new facility Wednesday afternoon in a celebration of whiskey and Waco. The event attracted Mayor Malcolm Duncan Jr., City Manager Dale Fisseler and a handful of city council members and county commissioners. The $14.5 million distillery on 11th Street fills the old four-story Texas Fireproof Storage building. Balcones barreled its first whiskey distilled at the new facility in February, and now its doors are officially open.
Shaun Siems, owner of the Spirit of Texas distillery in Pflugerville, said his dream was to create top-shelf Texas whiskey, and now that dream is coming to fruition.
