Chris Lamb, formerly the head distiller, started learning a new skill last year when owner Daniel Barnes decided it was time for Treaty Oak to expand its boozy horizons. The distillery, now 10 years old, had moved onto 27 acres and had the room for trying something new. But Lamb didn’t expect he would dive full-force into the project so quickly.

A distillery in Blanco and a brewery in Liberty Hill have opened as destination tasting rooms, one west of the city, the other north. Andalusia Whiskey Co. and San Gabriel River Brewery are both about an hour’s drive from Austin’s core, but they’re banking on the success of brands like Real Ale Brewing, Live Oak Brewing and Treaty Oak Distilling to draw the crowds. Each of those companies and others have built picturesque places we want to visit.
In need of a commercial space when Valhalla took off, he now operates from Yellow Rose Distilling, where each batch matures in two 58-gallon Hungarian oak barrels. The entire production is done at the distillery, from infusing the alcohol with the spices in his own soaking tanks to barreling, filtering and, ultimately, bottling.
